Sprinkle with a good pinch of chilli flakes and season generously with salt and pepper. Spread the dates and lemon rind evenly over the lamb. Finely chop the leaves from the thyme and marjoram, if using, and sprinkle these over too. Roll up the lamb breasts to enclose the stuffing and tie securely with kitchen string.
